Five Ways To Incorporate Pumpkin Seeds Into Your Diet

It’s that time of year when everything is all about pumpkins. While your pumpkin spice latte may be delicious, it’s not exactly a nutrition powerhouse. A treat now and then is surely acceptable, but the real deal is far more healthful. When you’re not in the position to eat pure pumpkin, know that the seeds boast plenty of goodness that rounds out a healthful diet.

The seeds are a rich source of vitamins and minerals, fiber, protein, omega-6 fats, and more, and the nutty taste is almost addictive. Swap out your bag of go-to potato chips and munch on pumpkin seeds instead. Make them yourself my toasting from a fresh pumpkin, or pick some up at your grocery store.

Naturally, you can eat your pumpkin seeds plain, but that’s pretty basic. As an on-the-go snack it makes sense, but there are other ways to incorporate pumpkin seeds into your diet that are fun, flavorful, and fulfilling.

Check out these five ideas below, and pump up your pumpkin!

Seeds In Your Smoothie

Boost the nutritional value of your favorite smoothie by adding ¼ cup pumpkin seeds into the blender. Whether you go for a green smoothie, a banana peanut butter creation, or a beautiful berry mix, the seeds will add a unique taste you’ll love. Sprinkle some extra seeds on top for good measure.

Add “Oomph” To Oatmeal

Plain oatmeal does the job come breakfast time, but mix-ins make the morning even brighter. Spoon in a few tablespoons of pumpkin seeds just before devouring your oatmeal, and the crunch will kick things up a notch. To go all-out pumpkin, add ¼ cup pureed pumpkin too. It’s the perfect fall breakfast, and it’s quick to whip up. Don’t forget the cinnamon!

Sprinkle Over Salads

Ditch the greasy croutons and add texture to your salad with pumpkin seeds in their place. No matter what type of salad you’re serving, pumpkin seeds are a nice addition to an appetizer portion or a main dish size salad. They go especially well with dried cranberries and crumbled blue cheese over field greens. You can even mix them directly into your salad dressing so no bite gets missed.

Do Up Your Dairy

Mix some pumpkin seeds into your cottage cheese or yogurt for variety. The texture is too good to resist, and you’ll enjoy the flavor just as much. They make a great topping for “fro yo” too – a much healthier option than chocolate chips or sprinkles. Drizzle some honey on top for a hint of sweetness that really satisfies.

Dough Done Better

Use store-bought dough for dinner rolls or pizza crust and fold in a handful of pumpkin seeds. The unique idea will make mealtime more like a gourmet adventure. If you make your own dough, more power to you! The seeds can also be added to muffin, scone, and cookie recipes. Use your imagination as you bake. The results will be remarkable.
